My boyfriend loves a good chocolate dessert and for his birthday, I decided to make him this decadent hazelnut chocolate entremet which I call, Hazelnut Lover. It has layers of chocolate flourless sponge, crispy wafers, hazelnut creamy, creme brulee and a 70% chocolate mousse.
Due to the freezing time required, I spent about 3.5 days working on this cake. I started with the creme brulee and hazelnut filling first, and then made the flourless chocolate sponge smeared with crispy chocolate wafers. Lastly, I made the 70% chocolate mousse and the shiny glaze.
For decorations, I piped some white chocolate love hearts to go around the outside of the cake for decoration. I also made a white chocolate Happy Birthday plaque to go on top of the cake.
This wasn’t an overly difficult cake to make as all of the elements are fairly simple to create. The hardest part of this cake I think is handling the chocolate mousse. Due to the amount of eggs in this recipe as well as the high 70% cocoa content of the mousse, it was quite resistant and I had to work quite fast before the mousse started to set.
It was an enjoyable experience making this cake and I’m glad that my boyfriend and his family liked it – his mum even went for seconds! The layers of the cake go really well together and it was a crowd pleaser. Definitely a favourite for those who love decadent chocolate desserts.
